aip lemon maple vinaigrette

Okay! Are you ready for the BEST salad dressing ever!? It’s sweet and tangy and goes amazingly well with almost any salad.

Mixed greens, strawberries, blueberries, red onion, radish, cucumber? Perfect!

Green leaf lettuce, onion, beer, and olives topped with grilled chicken? Yes, please.

And it’s super simple. Gotta love that!

1/4 cup olive oil

1/4 cup maple syrup

juice of two lemons

1-2 tbsp apple cider vinegar

salt and pepper to taste

sunrise

Going through pictures to make room on my phone and I see this picture and life stops for a moment. It all comes flooding right back.

I took this picture the morning after Hudson was born. It was his very first sunrise. His first new day. He laid in my lap and we watched it together. The dark gave way to every color-gentle blue and purple, bright pink and red, flaming orange and yellow. The sun rose and with it the joy of my precious Hope.

Just a year prior I was in the same hospital giving birth to a tiny perfect boy whose heart was still. My Beckett. He was born in the evening and I held him for four beautiful broken grace filled hours. And I went home in the wee hours and crawled into my bed. And I remember watching the sun rise from my bed and the longing in my heart almost killed me. How could the world go on when my heart had been shattered?

Beckett was our rainbow. He was suppose to be the one. But my tiny one never got to see the sun. The sun rose and brought light to the darkness of the night but my arms were empty and my heart broken. That moment, that single moment, will be etched into my heart for all my days. The crushing. The hope. Where Jesus met me when I was as broken as a human can possibly be.

Beckett’s eyes never opened here. Instead his first sight was Him. His sunrise was in heaven. And while there is joy in that the emptiness of it hurts beyond words.

And so this picture was everything to me. This first sunrise with my Mr. Hope. This new day. It was a gift to show that even the darkest blackest most broken nights do in fact give way. That He does bring beauty from the ashes. And He does redeem what is broken.

My heart may never be the same after Beckett. Nor should it be. But there is such joy and hope in the brokenness now. And I am thankful.

aip salmon (or tuna) salad

Let’s talk breakfast! The most important meal of the day!
Breakfast is the first meal of the day and lays the foundation for your energy, metabolism, and mood. The ideal breakfast has protein, healthy fats, and lots of nutrients.
My breakfast this morning was flaked salmon, a whole avocado mashed, cilantro, green onion, dill, juice of half a lemon, salt and pepper. Mix it all together.
My boys call it shamrock salad! ??

Remember what we put into our bodies (and on them) is either a vote for health or a vote for illness. Food really is medicine!

aip carrot cake breakfast bowl (coconut free no-atmeal porridge)

I get a lot of questions about what I actually eat (I’m currently aip). So I thought I would post one of my favorite breakfast bowls!
We call it carrot cake porridge. It was cold this morning so I didn’t want my usual smoothie with collagen. This warm nourishing bowl was perfect! It lacks in protein though so make sure to include that as well (a side of bacon would be great).


Carrot cake porridge
1 whole apple diced
1 cup diced carrots
1 tsp cinnamon
Pinch of salt
1 tbsp oil of choice (butter, coconut etc)
Maple syrup to taste
1/4 cup raisins
1 whole cooked sweet potato
3/4-1 whole cooked spaghetti squash (depending on size)

Sauté carrot and apple in oil until slightly tender. Set aside. Purée cooked sweet potato (skin on) and the spaghetti squash (scrape out all the inside and use that). Mix all ingredients together and drizzle with lots of maple syrup! Done!

best aip dipping sauce

 

Y’all have to try this sauce!!!

On aip you avoid nightshades and soy so sauces like bbq and teriyaki are out.

But this sauce? Totally compliant and amazing. Works as a marinade, glaze, or dipping sauce.

AIP Sweet dipping sauce
1/4 cup maple syrup
1/2 tsp garlic powder (more if you love garlic!)
1/2 tsp onion powder
1/4 tsp powdered ginger
1/4 tsp salt
2 small pinches of dried thyme
Pepper to taste (if you have reintroduced it)
Splash of apple cider vinegar

Warm it up to mix the flavors and that’s it!
So good!

aip nourishing broth

This has been my breakfast this whole week and I wanted to share! When I first started using my marine collagen powder I tried to use it in smoothies. It just wasn’t working out since I could taste it and fish and fruit just aren’t that awesome together (unless we are talking mango salsa!). Anyway, I knew I had to use something savory. A mug of chicken broth, two scoops of vital proteins collagen, some chopped cilantro, green onion, and mushroom. It’s honestly one of my favorite things EVER. We call it nourishing broth. It would be amazing if you are sick or recovering from a flare. Our bodies need collagen (the most abundant protein in the body). This is soothing, healing, and so delicious.
