Finally a teething cookie you can feel good about. These cookies are the perfect sweet treat! They are a firm cookie that is perfect for teething babies. But no one will judge if you eat a few too ;).
aip teething cookies
1 cup tigernut flour
1/4 tsp baking soda
1/8 tsp salt
3 Tbsp oil (I used avocado)
2 Tbsp maple syrup
10 finely diced dates
1/4 tsp cinnamon
1/4 tsp ginger
Mix all ingredients and form into balls. Place on a cookie sheet and gently flatten. Bake at 350 degrees until golden brown on the bottom.
For the glaze mix carob powder and maple syrup together. Adjust the ratios until it is a thick liquid that can be drizzled over cookies.
To make a more moist version, add in pumpkin purée or banana. Start with 1/4 a cup and go from there.
