Prior to going aip, I was an avid baker. Muffins, cakes, pies, and cookies were a daily occurrence.
After a year of aip all I wanted was a muffin. A muffin that was moist and flavorful and coconut free. One single muffin. The struggle was real.
Aip coconut-free baking is NOT for the faint of heart.
But here it is! Finally. Completely compliant, delicious, and everything I was hoping for.
MMMMM muffins
2 cups tigernut flour
1tsp baking soda
1/2 tsp cream of tartar
1 tsp cinnamon
1 Tbsp gelatin bloomed in 1/2 cup very hot water
*to bloom gelatin add slowly to water while whisking vigorously
1/4 cup maple syrup
1/4 tsp salt
1/8 cup applesauce
1/8 cup oil (I used olive oil)
1-2 cored apples shredded
splash of apple cider vinegar
Streusel Topping
1 Tbsp butter/oil
2 Tbsp tigernut flour
2 Tbsp powdered maple syrup
1/4 tsp cinnamon
mix with a fork until an even crumb is created
Mix all muffin ingredients well and spoon into a greased muffin tin. Top with streusel topping. Bake at 350 degrees until a toothpick comes out clean.
